Intense straw yellow color.
The nose is intense, fine in quality and clean. Fascinating aromas of orange citrus, with notes of seaweed, broom and aromatic herbs. Some spices, and locust honey give depth to the fan, for an excellent quality profile.
On the palate it shows off a thick structure, with minerality and acidity well evident. The vinification on the skins also allows the extraction of a very light tannin, so that the creaminess of the wine does not overwhelm the hardness. Excellent balance and depth of the sip, for a very long finish full of references. The aromas are of orange peel, aromatic herbs and dried fruit.
Sicilian white wine, from autochthonous vine, partially fermented with the skins, capable of surprising, for its complexity and cleanliness, and for the extreme flexibility in food pairings.
IL Grillo is a vine obtained from the cross between Catarratto and Zibibbo in 1873 by the agronomist Antonio Mendola
Menfi Grillo Coste al Vento 2019 Barbera
The grapes come from the vineyard of the Pozzo where the hill slopes gently towards the sea, in the Torrenova district of Menfi in the province of Agrigento.
The soil is mainly clayey, with the presence of skeleton.
In the Barbera cellars the harvest takes place during the night and early in the day in the first weeks of September.
It carries out the pre-fermentation maceration for 36 hours at low temperature, then it ferments in stainless steel containers with the skins and indigenous yeasts for about a week. Then the racking is carried out and the must continues the fermentation until the total transformation of the sugars
Refine in the same fermentation vessels on fine yeasts for about three to six months.
