The nose is from the beginning persuasive, with wonderful aromas of candied citrus peel, bergamot in particular for its intrinsically smoky notes. Chamomile, white peach and white melon, then notes of croissants and spices anticipate those of fresh herbs, thyme and oregano. Not only varied and well-assorted, but clean and intense.
On the palate it shows character and wisdom, with enviable volume, supported and well accompanied by hardness. Excellent minerality and together with freshness make the whole thing lively and fascinating. The persistence is also excellent, with aromas of brioches, flowers and fruit.
Excellent representation of Sauvignon Blanc from the Southern Hemisphere.
Marlborough Wild Sauvignon 2019 Greywacke
Greywacke grows grapes for his Wild Sauvignon in several valleys of the southern part of the Marlborough appellation in the central plains of Wairau, in particular in Woodbourne, Renwick and Rapaura.
After the harvest, carried out partly by machine and partly by hand, the grapes are pressed and the must obtained is left to settle cold. It is then decanted into used barriques and left to ferment with indigenous yeasts. Stirring continuously, the must was transformed into wine in six months. 75% underwent the malolactic transformation.
