Chardonnay The Inextinc Franc de Pied is a rare gem. It is located in the municipality of Villy, in La Magette and extends for 55 ares. This place has very special characteristics, and in fact the phylloxera did not find the ideal conditions to take root. So the vineyard is a straight footing, that is pure chardonnay, without an American vine rootstock.
The soil is inhospitable to the parasite and consequently complex to work, in fact, it is very fat in winter, but tends to dry up and dry up in summer.
The terroir and the free foot, bring the grapes to reach the parameters of maturation in a unique way.
After the harvest, carried out only by hand, the juice extracted by gentle pressing is statically settled until optimal turbidity is reached.
Alcoholic fermentation takes place in temperature-controlled stainless steel containers.
In the same containers it carries out the malolactic transformation.
All the chablis of the Domaine Poitout are aged exclusively in stainless steel, to better enhance the minerality and characteristics of the terroir.
