The Chablis Premier Cru “Vaucoupin” Premier is located on the right bank, in the municipality of Chichée. Vaucoupin is completely representative of the chardonnay produced in Chablis. Portion of vineyard owned by LC Poitout is one of the best. Facing west, the vine takes advantage of the afternoon and evening sun.
Soil: it is made of limestone clayey marl dating back to the Kimmeridian period.
One third of the vineyard is 40 years old, while the remaining 2/3 have 25. The vines are ripe to express remarkable overall aspects.
Harvest: it is done manually, and once they arrive in the cellar, the grapes are gently pressed. The juice is subjected to static settling until reaching the optimal turbidity.
Alcoholic fermentation takes place in stainless steel containers. Completely carries out the malolactic transformation.
All the chablis of the Domaine Poitout are aged exclusively in stainless steel, to better enhance the minerality and characteristics of the terroir.

Straw yellow color with gold shadows.
The nose has clear, pure and very fine aromas of white flowers. Hawthorn, orange blossoms and magnolia. Citrus peel and white peach can also be distinguished.
On the palate we must highlight the perfect balance of the parts. The hardness side is well represented by the freshness expressed by the acidity and minerality typical of the soil with a large presence of fossils. The seniority of the plants, and a contained yield, translate into a fine creaminess. Overall we have a truly remarkable fruity length. In the back smell aromas of candied citrus peel and aromatic herbs.
Effectively accompanies dishes with seafood. Also grilled and served with butter flavored with fresh aromatic herbs. Also excellent with Parma ham with aging of at least 30 months.
