The nose has intense, clear and refined aromas of Regina Claudia plum, white apple, acacia honey, lemongrass and the fascinating vaguely smoky notes of bergamot. Also in this vintage the breezes of the sea blown by the wind flank the glass.
On the palate it is supported by an excellent framework, made of freshness and above all minerality. The harmony is all in the thickness of the sip which is creamy and deep. It stretches between very persistent aromas of honey, sweet spices and citrus fruits. Its whole is truly remarkable.
It has great potential to improve over time.
Excellent Chablis to taste with oysters, crabs, prawns and other seafood. Also excellent with regional cheeses such as Chaource and Soumaintrain.
Year after year the Chablis is perfect for understanding the passion and great skills of Louis and Catherine.
Small, but big company. Still unknown to the general public, it won’t take long to reach stardom.
Chablis Bienommée 2021 LC Poitout
LC POITOUT has an extension of Chablis classified vineyards of 10 hectares. They are distributed in the municipalities of Maligny, with the vineyards (Châtillons Pierrette, Culmi), Villy (Vaudat, Vau Martin) Lignorelles (Conroy, Vau Prin) and Fleys (Plain Serre, Vice Plaine da Serre, Les Ardiats).
Each of these places has different terroir characteristics, the age of different strains, and for this reason they are harvested and vinified separately.
For the Chablis Bienommée they use exclusively the “Vaudat” vineyard located in Villy.
Vineyard that enjoys a famous terroir, already famous long ago for the quality it manages to express.
The vines were planted in 1987 and 1988. They have an eastern exposure on land with a large number of small pebbles.
After the manual harvest, the juice is gently pressed and the juice benefits from the static settling until the optimal turbidity is reached. Alcoholic fermentation takes place in stainless steel containers, at a controlled temperature. In the same containers it carries out the malolactic transformation.
All the chablis of the Domaine Poitout are refined exclusively in stainless steel, to better enhance the minerality and characteristics of the terroir.
