Straw yellow color
The nose has splendid aromas of fresh fruit, both local and exotic. Fishing. apple, banana and mango. Yellow flowers follow, with mimosa and gerbera and traces of the sea.
On the palate it shows great elegance and power with remarkable and favorable ability to age over time. The minerality on the other hardness stands out, for a long and pleasant sip. The creaminess expressed by the softness wraps the palate, so as to achieve balance without any effort, indeed with naturalness.
For several reasons, it is the Chablis 1er cru that is closest to the qualities of the Grand Cru. In fact, Defaix‘s interpretation manages to be extremely ductile, powerful and endowed with great finesse. Excellent chardonnay.
Chablis 1er cru Fourchaume 2018 Bernard Defaix
With its 115 hectares, the Fourchaume is the largest of the premier cru of the Chablis denomination. Located on the left bank of the Serein River, and next to the 7 vineyards classified as Grand Cru. Exposed to the south / south-east, it is normally the first vineyard to reach maturity.
Completely aged in 1 year barriques up to the fifth passage. The battonage is continuous and regular, so the wine does not absorb the woody aromas, but the finer ones of grape variety and terroir. After about 12 months of aging, the wine is bottled after a light filtration.
