Bernard Defaix, together with his two sons, Sylvain and Didier, represent the third and fourth generation of winemakers. The family owns 25 hectares in the Chablis appellation. Eleven are in Premier Cru, with the Côte de Lechet, Les Vaillons and Les Lys, 12 are from Chablis and 2 hectares of Petit Chablis.
Defaix owns 8 hectares of this vineyard classified 1st cru. It is located on the slopes of the Milly village and on the right bank of the Serein river. Impressive Exogyra virgula fossils have been found underground, perfectly preserved. The considerable amount of stone present in the soil allows the sun to be captured and retained. In wine this translates into power and complexity. Over the years, the wine blooms and expresses mineral aromas reminiscent of flint and gunpowder. The black powder is composed of coal, sulfur and saltpeter. Mineral traits that give richness to the bouquet and give the Côte de Lechet an extraordinary aging potential.
After the harvest, it ferments in stainless steel containers.
It refines in the same containers for a variable period, between 9 and 12 months on yeast residues.

Straw yellow.
The nose has aromas of citrus fruits, fresh fruit and delicate flowers. In the bouquet there are also sweet vanilla ideas. Look at the sensations that can be traced back to the flint stone, which will better characterize it over the years.
On the palate it is rich and well structured. The mineral features on the nose are confirmed by a marked minerality. Acidity is of similar thickness, which ensures drinkability to wine. In retro action aromas of grapefruit and fresh fruit arrive.
Overall it is an excellent Chablis, perfectly representative of the denomination. It has great potential for aging.
Accompanies fish or poultry dishes, with butter, cream or sauces. Perfect with oysters.
