The vineyard is in the high mountains at an altitude of 500 meters above sea level.
Training system: espalier with guyot pruning, while the density is 6000 plants per hectare, for a yield of 55 hectoliters per hectare.
The harvest, carried out manually in 20 kg crates, takes place in several stages from early September to early October.
It conducts alcoholic fermentation in the absence of the skins, partly in stainless steel and partly in barrique, with indigenous yeasts. Refine in the same containers in contact with the fine yeasts for nine months.
It stabilizes with the use of the winter cold and after a light filtration it is bottled.
Analytical data: the total acidity is 5.9 grams per liter and the sugar residues are 1.3 grams per liter.
