Variety: Pinot Noir 100%
Brilliant straw yellow color, with very subtle onion shadows.
The nose is intense and variously rich, with aromas of berries, orange blossom, and magnolia. The fruit boasts apple and pear in particular, and finally the notes of freshly baked bread, croissants, and almonds add to the complexity and value.
On the palate it is very mineral. End the perception of carbon, which tickles without stinging. The absent dosage grants it extreme verticality, so as to show a sip that is not tired but fascinates. On the other hand, the softness lengthens and widens the volume of the wine. Persistent, with aromas of seaweed, almonds and flowers.
The Classic Method zero dosage expresses all the elegance and skills of a territory, highly suited to the production of bubbles, such as that of Oltrepò Pavese.

The grapes are grown by the Manuelina company in the vineyards located in the Ruinello di Sotto hamlet, in the municipality of Santa Maria della Versa.
Training system: Espalier with guyot pruning, with a density of 5000 plants per hectare.
After the harvest, carried out manually towards the end of August, the grapes are softly pressed with a lung press. Then, after racking into the fermentation containers, the selected yeasts are added, and the process is started. After racking, it carries out several decanting and at the end of winter the refermentation in the bottle begins.
The 2016 vintage remained on the lees for 36 months.
Disgorgement December 2019.
After disgorging and filling with the same wine, it remains in the cellar to stabilize for at least 6 months.
