Variety: Pinot Noir 100%
Brilliant straw yellow color, with very subtle onion shadows.
The nose has delicate aromas of citrus fruits and berries: red currant in particular. Folate of white flowers, have the fuller notes of bread crust, pastry and dried fruit. Clean and precise the aromas are of quality, and in vitano to the sip.
On the palate we observe a well painted structure, with minerality in large quantities and freshness adequate to the needs of the classic method. It expresses a correct creaminess, which puts the wine in harmony. Carbon dioxide is perceived very lively and fine in its consistency. The sensations persist, with aromas of almond, croissant and currant.
The Metodo Classico brut 137 elegantly expresses the abilities of a territory, highly suited to the production of bubbles, such as that of Oltrepò Pavese.

The grapes are grown by the Manuelina company in the vineyards located in the Ruinello di Sotto hamlet, in the municipality of Santa Maria della Versa. The parcel used for the creation of the brut Classic Method is exclusively that indicated with the cadastral number 137.
Training system: Espalier with guyot pruning, with a density of 5000 plants per hectare.
After the harvest, carried out manually towards the end of August, the grapes are softly pressed with a lung press. After racking into the fermentation containers, the selected yeasts are added, and the process is started. Then, after racking, it carries out several decanting and at the end of winter the refermentation in the bottle begins.
The 2016 vintage remained on the lees for 30 months.
Disgorging September 2019.
After disgorgement and dosage, it remains in the cellar to stabilize for at least 6 months.
