Franciacorta brut Satèn Vigna Dorata
Variety: Chardonnay 100%
The grapes that go to produce the Satèn di Vigna Dorata, are harvested from a single vineyard called “Cava”, near the town of Sala, in the municipality of Cazzago San Martino.
Type of soil: moraine of alluvial origin, with a sandy-sandy texture.
Training system: espalier with guyot pruning, with a density of 5000 vines per hectare.
The yield per hectare is 80 quintals.
The harvest is done by hand, the bunches are placed in small boxes. In the shortest possible time, the very slow and soft pressing of the whole bunches is started.
It carries out alcoholic fermentation at a controlled temperature in stainless steel containers until late spring. It remains on yeast residues with frequent battonage.
Refermenta in bottle for a period of 24 – 36 months, depending on the vintage.
Dosage: between 5 – 6 grams per liter.

Intense straw yellow color, with a vague tendency towards gold.
The nose is intense, complex and fine. Really impressive, because it is charming, it has the scent of fruit tree and citrus flowers. These are followed by those of small pastries, light honey, locust honey and dried fruit.
In the mouth it is creamy as the different production method implies, so the carbon is decidedly gentle, and together with good minerality and good acidity, they design a liquid arabesque that is very pleasant to drink. Absolutely free of bitter notes, concludes with a memory of candied citrus fruits.
Excellent and still excellent Franciacorta, able to excite, absolute winner of the value for money.
The Satèn method provides a final pressure of less than 5 atmospheres. Most Satèn has a pressure of 4.5 atmospheres. The Classic Method has a pressure that can vary from 5 to 6 atmospheres. Other peculiarities of the production disciplinary is the exclusive use of white grape varieties, and the final dosage, which is provided only and exclusively in the brut version.
