The nose has defined, varied and powerful aromas. Pitted hints of plum jam and subtle notes of undergrowth, Spices appear at the window, from where aromatic herbs and balsamic notes also come.
On the palate it is well designed, with a notable presence and abundance of volume. The sip is full, and balanced in its parts. The memory of balsamic notes, aromatic herbs, leather and blond tobacco persists.
Venetian red wine capable of establishing itself in its category. It is an extremely effective accompaniment to dishes of braised meats and roasts with polenta. Even feathered game, such as larded thrushes.
Valpolicella Classico Superiore Ripasso Il Carlin 2018 Coali
Tenuta Coali cultivates the four varieties that make up the Valpolicella Classico Superiore Ripasso in different vineyards located in the heart of the most highly suited area, in Sant’Ambrogio in Valpolicella in the province of Verona.
The vineyards are located at an average altitude of about 300 meters above sea level, on calcareous and clayey soils, with excellent water drainage capacity.
Training system: against espalier with guyot pruning.
The harvest is done manually towards the end of September
As soon as they reach the cellar, the grapes are rasped and pressed to carry out the alcoholic fermentation in stainless steel containers for 10 to 12 days. After the alcoholic fermentation, the wine is separated from the skins and stored in steel tanks until January. In that month the dried Amarone grapes are pressed.
After the fermentation of the Amarone, the pomace still rich in substances is immersed in the Valpolicella, so as to yield precious sensations to the wine.
Aging for 54 months in large oak barrels and a further 6 months in the bottle
