The vineyards that produce the Primitivo di Manduria Sessantanni are found in the municipalities of San Marzano and Sava and are very old.
Soil: it is consists of residual red earth due to the conspicuous presence of iron oxides. The texture is fine with a calcareous substratum and sporadic rocky outcrops.
The harvest, carried out manually, takes place in the second half of September, to reach a sort of over-ripening of the fruit.
Alcoholic fermentation is at a controlled temperature of 24-26 ° C; for 80% of the mass it lasts 18 days, while for the remaining 20% it extends up to 25 days. The yeasts that conduct the fermentation are selected on their own vineyards.
After having undergone malolactic fermentation, it is aged for a year in French and American oak barrels.
