Ruby red color with light garnet red shadows.
The nose is intense and complex. Exuberant aromas of fresh fruit, with black cherry and red plum, lush and ripe. The notes of Mediterranean scrub follow, and those of flower petals. The toasted and leather notes anticipate those of the spices, which begin to open and become perceptible. Very young, but nevertheless endowed with a valuable olfactory prospect.
On the palate it is confirmed of excellent quality. Balanced between hardness and softness, in particular thanks to the tannic texture on one side and creaminess on the other. The memory it leaves remains with authority and is persistent, including aromas of fruit, green tea and spices.
Among the so to speak simple Morellos, that of Col di Bacche stands out in every vintage for being consistently one of the best. Fresh and pleasant, a Sangiovese that surprises the taster.

The training system is the spurred cordon, with a density of about 5000 plants per hectare.
The harvest is carried out manually in the first part of October. Alcoholic fermentation follows in stainless steel containers at a controlled temperature of about 28 ° C for a variable period of 15-20 days. During this period of time, continuous pumping over of the marc is carried out.
Refine in the same stainless steel containers with frequent decanting.
