Soil type: medium mixture tending to calcareous.
Training system is espalier with traditional Guyot pruning, and the density of the vineyard varies from 5,000 vines per hectare in the younger vines, to 6,000 in the older ones.
Yield per hectare: 70 quintals.
Harvest: manual, carried out, according to the different vintages, between the middle and the end of September.

Intense purple red.
The nose is characterized by aromas of fresh red fruit: cherry and berries. Follow the flowers, like violet and geranium. Even the perfumes attributable to the grape itself are pleasant and comforting. Overall it is fragrant and of good complexity.
In the mouth it is balanced, with extreme pleasure of drinking. Good minerality on the side of hardness, and creaminess from that of softness. In the retro olfation, nasal receptors give aromas of ripe and fleshy fruit. Persistent. It has ability to evolve over time, much longer than you think, giving over time, unexpected complexity.

Accompanies with consistency an infinity of traditional Piedmontese and Ligurian dishes. The boiled Bue di Carrù, the stewed rabbit in terracotta pan with thyme and taggiasche olives, the lamb chops, and the red lentils with onion, celery, cherry tomatoes of Pachino and Etna red pepper.
