Castillon Cotes de Bordeaux
Variety: 100% Merlot
Located between Saint-Émilion and Castillon-la-Bataille, the Château Des Demoiselles is one of the most famous properties of the Ducourt family, both for the excellent quality of its wines, as for its past linked to the great moments of history
from France. The name of the “Demoiselles” dates back to the late Middle Ages when the domain was run by a congregation of nuns. The monks ensured the culture of the vineyard and the education of the children of the Parish.
Every year in the Castillon Cotes de Bordeaux Chateau Des Demoiselles Reserve de Famille, the Ducourt select the best grapes which are then vinified separately. Each plot is refined in different barrels and only at the end of the path is assembled to create a great wine.
Soil: it is clayey.
The breeding system is the espalier with pruning and guyot.
The vineyard is cultivated by adopting the principles of sustainable agriculture. t
After the harvest, the grapes arrive in the cellar, where they perform a cold maceration for a period ranging from 24 to 48 hours.
Alcoholic fermentation is carried out in stainless steel containers at a temperature of about 26 ° C. After this phase the wine macerates on the skins for another 3 weeks at 30 ° C.
Separated from the marc, the wine carries out the malolactic transformation into oak barriques.
It is aged in the same oak barrels for 24 months. The barrels are 50% new, 50% second pass.
After bottling it remains in the cellar for another 24 months.

Intense purple red
The nose is very intense, powerful and of great finesse. The head aromas are of dark berries, with blackberry and blueberry. Follows the ripe red plum, the violet, the pipe tobacco, and some hints of vanilla. Black pepper and spices in general also enrich the already complex olfactory perspective.
On the palate the entrance is fleshy, with excellent volume expressed by glycerine. Tannins are present, but silky. Excellent acidity for a pleasant and inviting taste. After swallowing aromas of spices and toasted hazelnuts emerge. The memory that leaves, for a great expression of Merlot, in his chosen land is very persistent.
