Pale ruby red with garnet shades.
The nose is intense, complex and fine. The aromas are distributed among the classic ones of stem fruit, with red plum and some traces of berries. Streams of flowers anticipate those of cinchona and spices. The undergrowth also characterizes this vintage and with notes of porcini mushrooms it broadens its capabilities and value. Clean and precise, it is confirmed as a Barolo with a capital B.
On the palate it confirms the expectations. Tannins present but made gentle and useful, acidity and minerality adequate so as to create a firm and stable framework. The softness brings the necessary to balance the wine. Long and persistent between splendid aromas of cinchona, blueberries and spices.
Like all Barolos, it has the ability to age happily, giving different emotions year after year.
It happily accompanies all dishes dishes with hare. On the stew it is splendid, as with all game dishes and stewed beef.
Barolo 2017 L’Astemia Pentita
Astemia Pentita produces its Barolo, following the ideas of tradition, which wanted it as a synthesis of different vineyards, and not the expression of a single Cru.
Training system: espalier with guyot pruning.
The harvest is carried out manually in small boxes, during which the quality selection of the grapes is carried out.
After a short cold pre-fermentation maceration, it carries out the alcoholic fermentation at a controlled temperature of 24-26 ° C in stainless steel containers, for a period of 30 days.
Refine in oak barrels of different sizes for 36 months. After assembly, filtration and bottling, it rests in the cellar for at least another 6 months, before reaching the market.
