Valpolicella Classico Superiore Ripasso 2016 Novaia
Variety: Corvina, Rondinella, Corvinone.
Certified organic.
Grapes are grown in the Novaje vineyard located in the municipality of Marano di Valpolicella, where the soil, of volcanic origin, is tufaceo.
Vineyard is cultivated at a right angle, with an average gradient of 10%. The surface covers 1.5 hectares and the sun exposure faces south and east.
Type of breeding is espalier with guyot pruning.
Density of the plants per hectare is 5000 and the yield is 90 quintals per hectare.
Harvest is conducted manually in the third decade of September.
Once the grapes arrive in the cellar, they are rasped and softly pressed. Alcoholic fermentation takes place at a controlled temperature in small stainless steel containers for 7 to 8 days
In January, the fresh wine produced at the end of September, are added the marc or Recioto or Amarone, to make a second fermentation and get to have the review.
Refine for one year in wooden barrels, and for 4 months in bottle.

Deep ruby red color.
The nose has intense aromas of cherry jam, and berries. Follow the sweet spices and notes, which evoke a soft background. Even traces of roots increase complexity and elegance. Overall, the aromas are well distinguishable and very pleasant.
On the palate it has considerable softness, expressed by the pseudo heat of alcohol, and the creaminess of glycerine. For the hardness we can say of all the tannins, mature and evolved, of a good minerality synthesized by the volcanic soil, and of a good acidity. The synthesis is a wine of body and structure, endowed with good harmony. In the retro olfation aromas of ripe fruit come to the nose, which persist for a long time.
