Produced with grapes from the Coteaux de Chavignol. The soil is rich in marl from the Kidmerigiano period with many fossils of small comma-shaped oysters. The vineyard benefits from an excellent sun exposure and a subsoil rich in minerals, which are transmitted to the wine.
After the harvest, the grapes arrive in the cellar and are gently pressed, and left to macerate at low temperature for 2 days. The must is transferred to used 600 liter wooden barrels where it ferments and then refines for 14 months. After bottling, it remains in the cellar for several more months before being put on the market.

Intense straw yellow color
The nose has citrus aromas, but among them, the uncommon ones: bergamot and chinotto. We can observe the resin of the pines, the very light vanilla and the more vegetable notes of the tomato leaf, the boxwood and the privet. Perfumes together classic but also different, singular and decidedly fascinating.
On the palate it is voluminous and at the same time extremely rich in hardness. The conspicuous quantity of minerality is almost obvious, which not only does not disturb, but even enriches. in terms of softness we have a large amount of glycerine to give thickness to the sip. In retro olfaction aromas of green tomato and sunflowers reach the nasal receptors.
Sauvignon Blanc conspicuous and rich in aromas, which consequently manages to match magnificently also with meat dishes. Try it with spiced free-range chicken wings, foie gras escalopes, and roasted rabbit with thyme and Taggiasca olives.
