Chablis 1er cru Côte de Lechet Réserve Cuvée Vielle Vigne 2014 Bernard Defaix
Variety: Chardonnay 100%
The grapes come from one of the oldest vineyards of the Côte de Lechet. Planted in 1955 by Bernard Defaix it is exceptionally well exposed to the sun (S-SE).
This “cuvée” is partially fermented in barrique, where it remains for 12 months on the fine lees with regular “batonnage”. During the assembly phase the wine aged in barrels is cut with the half which has been aged in stainless steel tanks. The final cuvée is bottled 18 months after the harvest.
The old vineyards manage to express all the power of Côte de Lechet. The bouquet celebrates the elegance of floral perfumes with the mineral intensity of the terroir. The characteristic and distinctive features are roundness, fullness, richness and persistence.

Excellent burgundy wine, which manages to accompany oily fish such as salmon or medium-fat fish, such as sea bream. Excellent also with seafood and par excellence with oysters.
