Alto Adige Sauvignon Mervin 2016 Meran
Variety: Sauvignon Blanc 100%
Produced with grapes harvested in various vineyards, located in the towns of Tscherms and Tyrol. The altitude is 450 – 550 meters above sea level.
Composition of the soil: it is sandy, clayey, enriched with humus, and light, permeable soil
of morainic origin. The vineyards vary in age from 10 years of age the youngest to 20 years of age.
The training system is the counter espalier with Guyot pruning.
After the harvest, carried out manually, they begin with a cold maceration for 12 hours. Fermentation
subsequent alcohol is carried out at controlled temperature in small stainless steel containers and in oak barrels. In the same containers it matures on the lees for about 5 months.

Straw yellow color with green shadows in the areas of least thickness
The nose has intense aromas of elderberry flowers, tomato leaf, white melon. By turning the glass there are also white currants, celery and traces of aromatic herbs. Remarkable the depth of the perfumes, and their particularity. Some classics that identify the grape, others that distinguish it by uniqueness.
On the palate it has volume for a valuable substance, even though it is well moored to the hard dock. In fact, acidity and minerality are in evidence, for an extreme incomparability in the culinary combinations. Aromas of citrus and fruit arrive. More than persistent.
Very interesting interpretation of Sauvignon Blanc from South Tyrol. It ranks among the best.
Accompanies omelettes with asparagus, raw fish, and spelled salad with raw vegetables. Penne with broccoli cherry tomatoes and desalted anchovies, spaghetti with cockles and trenette with pesto with potatoes and croissants. Curry chicken, and Mediterranean sea bass.
