Alto Adige Sauvignon Graf 2017 Merano
Variety: Sauvignon Blanc 100%
Pale straw yellow with green shades.
The nose has fine aromas of red and white currants, elder flowers, and celery. Swirling the glass also shows strokes of white peach and Mediterranean scrub. There is no shortage of aromatic herbs, from thyme to rosemary. Finish the tomato leaf.
On the palate it has thickness and structure. Good minerality and acidity between hardnesses. A slight residual sugar and the creaminess of the sugar alcohols are valuable softnesses. Overall it is an excellent Sauvignon Blanc, in particular if we consider the value for money. Once swallowed aromas of fresh fruit, boxwood and passion fruit arrive at the nose. Persistent.
Happily accompanies asparagus pie, with parmesan cream, sea bass carpaccio, pagaro tartare, with exta virgin oil and passion fruit. Among the latter, excellent with grilled chicken flavored with fresh aromatic herbs.

The grapes are harvested in different vineyards located in the municipalities of Lagundo, Cermes Tirolo and Marlengo. The height varies from 450 to 550 meters s.l.m .. The soil in some vineyards is permeable and of morainic origin, in others sandy and still in clay and rich in humus. The vineyards are 10 years old for the youngest, up to 20 years for the oldest.
After the harvest a cold maceration is carried out for 12 hours. Once these have elapsed, the alcoholic fermentation begins, in stainless steel containers at a controlled temperature. It refines on yeasts for 5 months, partly in stainless steel and partly in large wooden barrels.
