Bollinger holds an invaluable treasure.
The grapes come exclusively from two plots located near the company in Ay. They are classified Grand cru, and their names are: les Chaudes Terres et le Clos St Jacques. They are planted in very old Pinot Noir clones, in fact the peculiarity that makes them unique is that they are on the loose. Here the phylloxera has not been able to creep in, so these vineyards did not have to put the American graft holder.
Two historic vineyards are the origin of an exceptional champagne.
At least once in a lifetime it must be tried.
