Champagne brut Blanc de Noirs Extase 2016 Jean Diot
Variety: 60% Pinot Meunier and 40% Pinot Noir
The grapes are grown in the Coteaux d’Epernay in the Marne department, south west of Epernay.
The harvest takes place manually with separation of the different parcels.
During the pressing, the juices are separated. Alcoholic fermentation takes place in stainless steel containers.
The Cuvée is composed for a variable quantity between 75% and 85% of vintage wine and between 15% and 25% of reserve wine.
Refermented in the bottle for a minimum period of 45 months.
Dosage: 5 grams per liter

Straw yellow color
The nose shows varied and intense aromas of white pepper, candied citrus peel, with cedar and the smoky bergamot. Some fine spices are added with red and white currants. The whole is of great finesse.
On the palate it stretches with agility between the verticality expressed by the hardness, and the creaminess of such a long refinement. The synthesis is a very fine champagne, and perfectly indicative of the denomination of belonging and the dosage.
Vigorous and masculine champagne. Jean Diot makes one of the best expressions of extra brut sans année.
